Saute some chopped Vegan Italian Sausage about 1/4 cup, then I used 1 egg with yolk, and then 2 egg whites. I scramble those together. Heat up a tortilla shell a few seconds in the microwave. I use fat free american cheese, and top with salsa. Super Delicious!
